courgette houmous canoes

i enjoyed this so much i decided to blog it.

it's a lovely hot, sunny day here in suburbiaton [sic] and a fresh, light lunch was in order. i mulled over it all morning and you can see in the photo my latest creation.

the houmous recipe is adapted and adulterated from jennifer cornbleet's zucchini hummus recipe in raw food made easy. i used two small courgettes (zucchini), the juice of one lime, two cloves garlic, crushed, salt, ground coriander, ground cumin, chili powder and two large dessertspoons of seed butter. blend the lot in a food processor.

then cut two bell peppers (orange works really well here, but yellow or red are also great. don't use green, green bell peppers are unripe so they're bitter) along their natural curves to make three or four 'canoes' and pile the houmous in.

i made a little topping of one fat spring onion (scallion), two cherry tomatoes and a sprig of parsley, chopped finely, tossed in lemon juice and sprinkled over the top.

i dressed the plate with the last of our windowsill microgreens. tiny, tiny leaves of rocket (arugula), tossed in walnut oil and balsamic vinegar (truly yummy!)

i served it with a few greek black olives and some feta (neither raw nor vegan, but i was too busy yesterday to make the cashew/macadamia version) and a green salad. booyaa had some chorizo and jamon serrano with his.

all in all it was a lovely, light and very tasty lunch. full of luscious flavours and super juicy. even the lettuce seemed to be getting that much-needed hydration into our cells to keep us cool in the heat. perfect!
